Vegan and Vegetarian Thanksgiving Recipes

vegetarian-thanksgiving

During the month leading up to Thanksgiving, there’s a big focus on food and getting together. When we think Thanksgiving, most of us think “turkey.” But within our diverse crowd of loved ones, friends and family, there are many who don’t eat traditional fare. This month features Thanksgiving recipes that won’t relegate our vegetarian loved ones to a couple of boring side dishes. With these delicious vegetarian Thanksgiving recipes, everyone has something to enjoy.

Main Course Vegetarian Thanksgiving Recipes

No need to break out the tofurkey. These vegan and vegetarian Thanksgiving recipes are hearty and filling enough for a main course. They each have a fall feel, and you can build your menu around them.

  • Vegan meatloaf – Fill your food processor with mushrooms, onions and garlic for this delicious main dish. The vegan red wine gravy is the perfect complement for a cool evening.
  • Vegan vegetable stew – The best thing about this delicious stew is that you can change up the veggies in it depending on your mood. Plus it’s a great way to feature what you find at the farmer’s market so it’s super fresh.
  • Savory oatmeal with chickpeas and greens – We sometimes forget that oats are lovely outside the breakfast window. Use whatever greens you have on hand for a healthy and crowd-pleasing meal.
  • Kale and ricotta stuffed shells – This is a beautiful addition to a Thanksgiving table. Feel free to swap out the kale for some spinach if you prefer. Either way, the result is fragrant and melt-in-your-mouth delicious.

Thanksgiving Side Dishes

The best side dishes are easy to bring along or make at home throughout the winter.

  • Stuffed acorn squash – This can be served as a side dish or an entree. The pomegranate seeds mixed with goat cheese and maple syrup make this a perfect Thanksgiving treat.
  • Haricots verts with shaved parmesan – These thin beans are a nice addition to the oranges and browns on the table. They’re super simple to make and go over well even with picky eaters.
  • Simple pumpkin soup – If you’re looking for an easy soup, here you go. Pumpkin soup is a big hit around the holidays, but you don’t need to start with chicken broth. Bonus: this soup looks like a work of art with a drizzle of cashew cream.
  • 4-ingredient eggplant balls – The roasted flavor of these eggplant “meatballs” is perfect for an appetizer or a side dish.

Desserts

The great thing about vegetarian and vegan recipes for dessert is that they’re often healthy and they make use of interesting ingredients. And people wouldn’t eat them if they weren’t delicious! So this November, mix in a few of these twists on old favorites. Then sit back and watch the nonbelievers change their tune.

Food that Brings People Together

With many different eating lifestyles and tastes at Thanksgiving, these recipes focus on inclusiveness. Offering a wide variety of meat and vegetarian Thanksgiving dishes will make everyone happy, plain and simple. That way you can enjoy the leftovers together too. Plus, now that your mouth is watering, you might notice these recipes are pretty darn healthy. What more could you ask for?

Tips for a Fun and Safe Halloween

Halloween has changed over the years. Certainly the holiday’s origins were not kid-friendly, but many communities now promote alternatives to traditional trick or treating. Halloween parties, parades and “trunk or treat” events are more common. Still, parents and guardians should take a look at updated safety measures to ensure the little ones don’t get a real scare.

  • First, choose bright or colorful costumes and apply reflective tape if going outside in the evening.
  • Make sure all masks have large openings for eyes and nose/mouth.
  • Use non-toxic makeup and be sure to test on a small area of skin before applying.
  • Choose costumes that are flame resistant
  • An adult needs to check all candy or food before children eat it.
  • Finally, for kids who do go trick or treating, remind them to never ever enter a stranger’s house. Stay in a group and close to a trusted adult.

Autumn Vibes

Enjoy all of what the area has to offer this year with fall events. If you’re moved to entertain guests, put on some spooky sounds and impress them with a trendy Halloween costume. Or you may just want to sit back and enjoy the changing views with something sweet and a cup of tea.

Coffee Recipes to Make at Home

recipes_for_fall_coffee_drinks_you_can_make_at_home

Fall is the perfect time to enjoy warm coffee drinks as the weather cools down. But anyone who’s made it a habit of buying daily caramel lattes knows can get quite expensive. Just ask the millenials who are apparently putting more towards their coffee habits than their retirement savings! With the right coffee recipes, you can make delicious drinks at home easily. So before you spend another $5 on the latest caffeinated concoction, learn what you can create in your own kitchen.

Know the Basics

Cappuccino, Americano or latte? Even daily coffee enthusiasts can get confused when it comes to all the espresso-based drinks. If you want to make coffee recipes at home, here’s some info to get you started.

  • Choosing types of coffee can be as simple or as complex as you want. The two main varietals are arabica and robusta. Then decide on what kind of roast you want and how much caffeine is right for you.
  • What’s the best way to store coffee? Most people know the answer is no longer the freezer, but experts say to avoid clear containers as well. Go for air-tight storage at room temperature.

A Passion for Coffee

If you love coffee and want to embrace it as a serious hobby, invest in an espresso machine. You can choose from basic to one with lots of accessories for steaming milk and tamping the grounds. Here’s how you can get the most from your machine.

  • Learn grinding basics. The size of your coffee grinds will result in different tastes of your coffee and various sizes correspond to different types of machines.
  • Technique matters. When you first begin making espresso drinks, you might encounter a little trial and error. Any barista will tell you that practice makes perfect.
  • Finally, regular care and maintenance of your machine will keep it running perfectly.

Fall Coffee Recipes Made Simple

But what if you don’t have the elaborate equipment? Yes, you can still make a cappuccino in your pajamas. Start with freshly-brewed coffee from your favorite coffee maker, and experiment with seasonal flavors.

  • Pumpkin Spice Latte – Imagine not having to wait. Bring some to work in your travel mug on the first day you feel like fall.
  • Salted Caramel Mocha Latte – Make this delicious drink for kids or non-coffee fans by substituting more milk in for a salted hot chocolate.
  • Mexican Mocha – A touch of cayenne pepper makes this rich blended drink the perfect choice on a crisp fall day.
  • Vegan Cafe Mocha – This low-sugar, dairy-free indulgence is easy to make and is a healthy alternative to many other versions.
  • Vietnamese Coconut Coffee – Sweetened condensed milk and coconut cream give this strong brew a unique taste. Serve hot or cold.
  • Turkish Coffee – If you don’t have a Turkish coffee pot, or ibrik, a small saucepan will do the trick. Finely-ground beans and cardamom make this drink smell and taste delicious.

Sip Your Way Through Fall

Take along your homemade coffee as you meander through an outdoor market or apple picking with the kids. It will save you money and better yet, you’ll know exactly what ingredients you’re consuming. When you decide on your favorites, bake some warm fall breads to enjoy with your mug of java.

Instead focus on fun events in your community, reflecting on recent memories you created and mentally preparing for the season ahead. More events are on the way this fall at Liberty Harbor!

The Perfect Dog Day in Jersey City

the_perfect_dog_day

Jersey City residents love their dogs. And to show that love, they want to keep them healthy and happy. During the summer, that means finding the best dog friendly spots in town and keeping dogs safe from ticks. This year, Liberty Harbor is celebrating our furry friends for the 2nd Annual Dog Days of Summer Festival on Saturday July 21. But the fun doesn’t have to be contained in one day. The following are ideas from our biggest canine fans to give your pooch the perfect day — any time you choose.

Dog Friendly Ways to Start the Day

Even the laziest – er, most relaxed dogs love a good walk in the morning. But besides a morning constitutional, how can you begin your dog-centric day? You can explain the itinerary all you want, but Fido prefers to see plans in action. Beginning with food, of course…

  • Homemade breakfast – Dog owners who have a little time to experiment with canine cuisine will love these vet-approved recipes. Is your cooking a little bland? Enhance the flavor with some of Yum Yum Puppy’s all natural dog food seasoning.
  • Morning dog park visit – First, treat your pup to a new collar and leash from Double Dutch pet products. Next, upgrade your morning walk with a visit to one of Jersey City’s dog parks instead. Lincoln Park dog run is the perfect place to stretch all four legs in a game of tennis ball catch, or a rest under some shady trees. Hamilton Park has two separate dog runs to keep the big dudes and the little dudes separate.
  • Splash time – Swimming is much fun, dogs don’t know it’s exercise! Head over to Jersey City’s only salt water pool at Unleashed Pet Resort & Spa. You can swim with your dogs during summer months and sign a hesitant pooch up for lessons. Or, pack a picnic lunch bring Fido to one of New Jersey’s dog friendly beaches just a short drive away.

Keeping Cool (and Safe) in the Afternoon

Dogs and people love summertime, but the heat and abundance of ticks are problematic for both species. Here’s how to keep cool on your special dog day afternoon in some of our hottest temps of the year. And as for the ticks, vigilance is key.

  • Hit the trails – Begin your afternoon with a hilly hike at Leonard Gordon Park. Or, take a drive to Fairview Farm Wildlife Preserve. But wherever you go, be prepared: Ticks and the diseases they carry, such as Lyme, are on the rise everywhere. Learn about tick prevention from your veterinarian, and know how to find and remove ticks from your pets.
  • Beat the heat – We love being outside with our dogs, so remember that most of them are wearing a fur coat at all times. Keep them safe by bringing a portable water bowl wherever you travel, and stay on the lookout for hot pavement. If you can’t find shade, make your own.
  • Look good, feel good – Summer fun can lead to dirty paws and a salty coat! Waggy Butts Dog Grooming comes to you in their mobile van. They’ll clean and calm even the most reluctant customers.
  • Stop for a bite – Next, head over to Cafe Dolma to rest. Savor a pastry or a sandwich while your pup enjoys the patio and people watching.

A Relaxing Evening

Finally, begin to wind down your fun in the sun day with these more mellow activities. After all, dogs are experts when it comes to taking a breather and putting those paws up.

  • Decompress by the water – At Liberty State Park you’ll enjoy the breeze off the water as you and your BFF contemplate the day. Dogs are always welcomed here as long as they’re leashed.
  • Get in touch – Back home, give your dog a therapeutic massage. Why massage? Same reasons we love them: to de-stress, ease sore muscles and relieve tension. Another benefit is the additional bonding you’ll share with each other.
  • For very good dogs – Most dog owners can’t resist a brand new toy. Dakota Dog Company has everything you need to treat your pal to a new friend or snacks.
  • Snooze in style – It’s no news that your dog loves sleeping. So why not treat him or her to a brand new cushiony bed? Hound About Town carries the best dog beds for you to create the perfect day’s end.

Every Dog Has Its Day

Or so they say! It’s easy to make every day special for your dog when you live in pet friendly Jersey City. And it feels good to give back and say thank you to our loyal and steadfast friends. Remember to come out to Liberty Harbor’s Dog Days of Summer festival this Saturday to participate in the fun and activities.

Host a Summer Beer and Cheese Party

summer_beer_cheese

As the days get longer, you might feel inspired to throw a party or two this summer. This year, host a summer beer and cheese pairing party. It’s a great way to celebrate the warm weather, dear friends and some local Jersey City goods. A perfect place to start with ideas is the local beer and cheese pairing event at Liberty Harbor on Wednesday June 27.

Local Jersey City Fare

When you host a gathering, consider your choices of where to shop for food and drink. Supporting local businesses and agriculture is a great way to invest in your area. For example, shopping at your nearby farmer’s market is good for supporting the local economy, plus you get ripe and seasonal food. Shopping at family and locally-owned establishments in your area helps keep your neighborhoods thriving. While you prepare for your summer beer and cheese party, check out these local Jersey City staples:

Local CheeseVan Hook Cheese is located in downtown Jersey City and has a terrific variety for your cocktail or beer parties. Or skip the party and just shop for cheese for yourself! This family-owned business offers platters if you’re short on time.

A Brewery with ClassDeparted Soles Brewery brews right in the heart of downtown Jersey City. Not only do they have arguably the best craft beer in New Jersey, but selections made with 100% gluten-free ingredients. Something for everyone.

Summer Beer HQ – For all your summer parties, make sure to stop at Jersey Wine and Spirits on Jersey Avenue. They have the biggest selection of all your favorite beers, liquors and mixers. Plus, they deliver locally and what could be better than that?

Pairing Flavors with Friends

One of the best ways to go about a pairing party is to ask for a little help from your friends. If you supply a variety of cheeses, your guests can bring a certain beer. Try assigning them each a category, then they can choose 2-3 beer styles to bring from within that range.

  • Ales – Fuller-bodied with pleasantly hoppy finishes. Styles included are Pale Ales, Nut Browns and Abbey Ales. IPA or India Pale Ales generally have a dominant hoppy character and pair well with beer cheeses.
  • Sour Ales – Be brave: Go for something super sour and pair it with tangy cheeses like bleu or goat.
  • Wheat beer – Choose from witbier, hefeweizen or dunkelweizen and pair easily with fresh light cheeses.
  • Lagers – These beers are crisp and refreshing, perfect for summer. Lagers range from sweet to bitter and pale to black and pair well with soft cheeses.
  • Stouts and Porters – Both almost black in color made by top fermentation. Stouts usually have a creamy head and are less sweet than porters.
  • Malts – These are usually dark and sweeter, containing hints of toffee or nuts. Pair with hard, Alpine-style cheeses like Emmantaler.

Choosing Cheeses

When you visit the cheese shop, ask for recommendations. It’s good to have a plan before you begin shopping, so know your major cheese categories. Putting together a charcuterie board is an easy way to display all the food for your gathering. As for the beer, it’s best to go from lightest to darkest whenever doing a tasting. Most connoisseurs stick to about 3 oz. of beer per taste. Of course rules are meant to be broken, so the most important thing is to have fun.
